Recipe: 00160 Title : Fudgy Brownies Author: Shel Belinkoff Date : June 1995 _________________________________________________________________________ 3/4 cup brown sugar 1/3 cup unsalted butter 2 Tbs water 1 cup chocolate chips (6 oz) 1 tsp vanilla 1 tsp instant coffee 2 eggs, beaten 3/4 cup flour 1/4 tsp salt 1/4 tsp baking soda 3/4 cup walnuts, pecans or almonds chopped and toasted (optional) -------------------- Combine sugar, butter and water in a large saucepan and, as soon as the mixture just starts to boil, remove from heat. Add the chocolate chips, vanilla and instant coffee and stir until the chocolate melts. Beat in the eggs. Sift the flour, salt and baking soda together and add to the chocolate mixture. At this point you can add the optional nuts. Pour into a greased 8-inch square pan and bake at 325 degrees for 25-35 minutes. The brownies should look slightly underbaked in the center. A variation on these brownies is called "Peppermint Patti's Brownies" and is named for Patti Martin who lives Mendocino County in Northern California. Get the transplant team ready for this one.
